Bake N Blog

Staci Edwards has an annual Bake N Blog. I love this idea, and decided to try it out. I chose the Milk Chocolate Jumbo Oatmeal Cookies via Tastepotting. For the sole reason that I would normally not gravitate toward this much chocolate.

Recipe adjusted by Lemon Drops Foodie.

WHAT YOU NEED

3/4 cup all purpose flour
1/2 cup cocoa powder (best quality you can find)
1 teaspoon baking soda
1/2 teaspoon salt
1 cup unsalted butter at room temperature
3/4 cup packed light brown sugar
3/4 cup granulated sugar
2 eggs
1 teaspoon pure vanilla extract
2 1/4 cups large flake old-fashioned oats
1 1/2 cups milk chocolate chips

MAKE IT

PREHEAT oven to 350F
LINE 3 cookie sheets with parchment paper

IN MEDIUM BOWL, whisk together flour, cocoa powder, baking soda and salt
IN LARGE BOWL, beat butter, brown sugar and granulated sugar MED speed for 3 minutes
BEAT in eggs and vanilla
ON LOW SPEED add in flour mixture blending til just combined
GRADUALLY add in oats blending again til just combined
FOLD in chocolate chips

USE your cookie scoop to measure out cookies - dropping them 3-4" apart onto parchment lined baking sheets
BAKE 17 minutes
LET COOL in pan 5 minutes

Number one rule in my house about cookies...I only bake them before a family get together, so the majority of the cookies get consumed by others!

I wasn't a huge fan of this cookie. Mine came out a bit plumper than Lemon Drop's version. I did however have to use a combo of splenda packets and confectioners sugar because when I pulled all the ingredients out to bake the cookies, I was fresh out of sugar. I also never use parchment paper.

Great cookie for kids...the idea of chocolate distracts the good for you oatmeal inside. Both my kids and my nephews devoured the cookies.

Can't wait to go check out what the other people baked and try some new recommended cookie recipes. However, not adding this recipe to my cookie rotation. Its not a bad cookie, but not one I'd waste my calories on.

  1. Sorry to hear you were disappointed in the cookies. They definitely look yummy! Maybe using the Splenda & icing sugar effected the taste & texture.
